We learned to make each one of our items by traveling to and studying from where the best Pizza/Pinsa, Calzone and Zapiekanki was made. After extensive travel and research we found those places to be in remote areas of Italy, Sicily, Poland, France, Czech Republic and even Germany.
In today’s world of ‘fast food’ you will not find such items unless you venture to those places and we are not about to disclose those exact locales and pizza masters anytime soon; contrary to the many such requests by our fans. We build and sculpt each thing we make from scratch and use only the freshest and purest ingredients all made my Leonardo DaVinci’s equivalents at what they do.
There’s not even enough room on this website to explain the troubles we go through to get the same olive oil we absolutely need to maintain our signature taste. It’s like that chicken colonel with the secret herbs and spices over here for pizzas and where else are you gonna get that around here eh? And don’t even get me started over here about the special spoon to rub in the oil etc. That’s just the oil aspect so when I tell you about the details of the flour its a whole novel for sure. Like I said don’t get me started…
Of course to attain such level of food craftsmanship one must only use the finest ingredients. Therefore we positioned ourselves in close proximity to St. Lawrence market and have made arrangements with local produce suppliers and farmers directly to be able to have first selection of the ingredients we use.
Almost always we are able to complete these fresh produce transactions about 30-minutes prior to the food market opening as many of their suppliers understand our quest for perfection and often reserve special goods just for us!
We hope you enjoy our meals we prepare for you as much as some folks you may recognize dining with us at times such as Drake (whenever he mentions the verse in his live local Toronto performances at times: “them #$@&%*! be making slices into dices at the square” – he is actually talking about us!), the entire Raptors team and Britney Spears as well as many film celebrities including Tom Cruise and Lou Ferrigno.
Already people are talking about lets franchise this, get the stuff into stores or whatever but for us there’s only one way to make all we make. For now we’re just enjoying the moment making the best possible pizza pies, calzones and zapiekanki on the planet and serve visitors from all over the world.
We do have other chefs wondering the globe studying other items we hope to make in the future but for now our pizza squares are only available around our shop where our special stone pizza ovens are set up. When they’re ready – we’re ready for them and at least one chef I assure you is coming back soon with knowledge to make an amazing new upcoming dish which we may introduce as 2020!
But as over 65 million people pass by the busy city square each year and many stop by our humble shop and most place an order please keep in mind that with just three chefs. While each of these ‘three tenors of the pizza world’ as they’ve been called (each trained in a specific discipline of the three products we make) we can only accommodate so much online orders while being able to take care of our walk in clients.
While some visitors do treat our food items as souvenirs or ‘works of art” – please we encourage you to eat them while they’re hot as our chefs intended. You can always come back for more as we enjoy many happy return customers daily and customs apparently is never happy about finding our items within the airport luggage as we have learned.
So pull up a seat at Dundas Square whenever you are in downtown Toronto sometime and see for yourself what the local hype is all about or you might get lucky to catch us online here to deliver anywhere within a five mile radius of Dundas Square Toronto.
